Introduction
The licensed retail industry is fast-moving and dynamic, like few others in Britain. As the name suggests, the sector covers the retailing of alcohol for consumption both on and off the premises, through sites that are both directly managed by large branded corporations, and through non-branded outlets owned and managed by individual retailers. This chapter focuses on the sector where the license to sell alcohol is principally to consume alcohol on the premises, because the public house, or pub as it is colloquially known, involves a venue for hospitality and hospitableness.
