Among families in poverty, one of the most important challenges is access to sufficient quantities and quality of food. In the early 1990s, about 10% of the U.S. population was estimated to suffer from poor nutrition associated with poverty (Barraclough, 1991). In 2002, the prevalence of all types of food insecurity in the United States was 11.1%, with the more severe form of food insecurity involving hunger affecting 3.5% (Nord, Andrews, & Carlson, 2003).
