We have analysed various aspects of the tourist gaze and noted that the gaze can take different forms, relating to the kinds of organisation possible of the tourist-related industries that develop to meet such different gazes. In this chapter we consider in detail the complex relationship between two elements involved in the provision of tourist services. On the one hand, there are the practices of tourism, which are highly structured by distinctions of taste. Such practices lead people to want to be in certain places, gazing at particular objects, in the company of specific other types of people.
