Before a meal service in any professional kitchen, trained chefs practice an ancient culinary art called mise en place. Meaning roughly “putting [everything] in its place,” the ritual consists of thinking through and deconstructing all the day’s tasks—gathering the tools, prepping and chopping ingredients, visualizing and rehearsing steps of the service, and reasoning through potential trouble spots—in advance of the service.
